Campfire Skillet Steaks

Serves 2 · Prep 10 min · Cook 12 min

You'll need

  • 2 ribeye or strip steaks, about 1 inch thick
  • 2 tbsp Dusty's Campfire
  • 1 tbsp neutral oil
  • 2 tbsp butter
  • A cast-iron skillet and a good bed of coals (or medium-high heat at home)

Directions

  1. Pat the steaks dry and dust every side generously with Campfire. Let them sit 15 minutes while the skillet heats — the rub needs a minute to make friends with the meat.
  2. Get the skillet screaming hot over the coals. Add oil, then the steaks. Don't move them for 4 minutes.
  3. Flip once. Add the butter and spoon it over the steaks as they finish, 3–4 minutes more for medium-rare.
  4. Pull them and rest 5 minutes on a board. Slice against the grain and eat outside if at all possible.

Resting isn't optional. Five minutes off the fire keeps the good stuff in the steak instead of on the board.
